Yves Pouliot, Ph.D., a renowned authority on milk protein fractionation, milk processing and milk peptides, has been named the recipient of the 2010 IDFA Research Award in Dairy Processing. A food scientist and entrepreneur, Pouliot has devoted most of his research to milk chemistry and dairy processing, with a focus on the production and separation of whey bioactive peptides.

This annual award recognizes researchers whose findings have allowed processors to develop new products and to make significant improvements in the quality, safety or processing efficiency of dairy foods.
