Derek Nelson is the Director of Commodity Risk & Analytics for Little Caesars Enterprises, Inc. where he manages the commodity risk management program for food ingredients in addition to overseeing the shred cheese procurement program. As part of his role with Little Caesars, Derek is responsible for addressing the various price risks associated with the cheese and flour markets through the use of futures, options, OTC and physical trading strategies. Prior to working for Little Caesars, Derek was a floor trading at the Chicago Mercantile Exchange within the NASDAQ 100 and S&P 500 futures markets before transitioning to the brokerage side of the business with INTL FCStone, where spent eight years working as a Risk Management Consultant as part of the Foods Group with a focus on the dairy industry.
