Dairy Facts 2013, published by IDFA and Dairy Foods magazine, provides a comprehensive overview of 2012 sales, consumption and production data for the dairy foods industry. With more than 100 pages of industry facts and figures, the booklet offers an excellent summary of the overall health of the U.S. dairy industry and dairy trends.

Available in print or PDF format, Dairy Facts provides information from government and private market research sources on the fluid milk, cultured dairy, cheese, and ice cream and frozen desserts markets. Here are a few highlights:

  • Total U.S. farm milk production set a record for the third straight year, reaching 200.3 billion pounds in 2012.
  • Yogurt continued to be a bright spot for the U.S. dairy processing sector and set another record in 2012, increasing by 144 million pounds to 4.416 billion.
  • Total production of ice cream and related frozen dairy desserts increased for the third consecutive year in 2012 to nearly 1.6 billion gallons.
  • U.S. per capita consumption of natural cheese increased by 0.24 pounds over the 2011 amount, reaching a level of 33.51 pounds, the highest amount on record.
