Could Cheese Be a Key to the French Paradox?

Despite a high consumption of saturated fat, France enjoys one of the lowest rates of cardiovascular mortality in the world. This phenomenon has been dubbed the French paradox. Researchers in the U.K. reviewed some of the reported cardiovascular benefits of cheese consumption and propose that cheese, rather than red wine, might be the missing piece explaining the French paradox.
