Manuel Castillo from the University of Kentucky received the 2008 IDFA Research Award in Dairy Foods Processing during the American Dairy Science Association annual meeting July 9 in Indianapolis, Ind. Castillo is an assistant research professor in food science and technology in the university's department of biosystems and agricultural engineering. His research on the chemistry of milk products and the engineering of dairy foods processes, especially the use of optical sensors to study, monitor and predict curd moisture during cheese making, will help to improve the quality and efficiency of cheese manufacturing.
