HACCP Courses
IDFA's Advanced HACCP Certification Short Course for Dairy and Juice Products is the cornerstone of the IDFA HACCP Certification Program. The short course uses team exercises and expert presentations to provide comprehensive instruction on the development of HACCP food safety programs within all dairy and juice operations. It is designed to meet the training requirements established for the NCIMS Grade A HACCP program, the Food and Drug Administration's juice HACCP regulation and the Safe Quality Food (SQF) Institute's HACCP training recommendations.

Dairy HACCP Manual 2008
Updated and enhanced as of August 2008, the Dairy HACCP Manual outlines how to start a HACCP program and provides details on building and organizing a plant prerequisite program. The manual covers the practical application of the seven principles of HACCP, including all necessary forms and model dairy HACCP examples.
The manual also contains 21 dairy product HACCP models with specific product descriptions, flow diagrams, hazard analysis and HACCP plans. These models cover fluid and flavored milks; creams; cultured dairy products, such as yogurt, buttermilk and sour cream; many cheeses; ice creams; and other frozen dessert products. It's a must for any dairy operations facility.

Juice HACCP Manual Supplement 2007
This manual, updated and enhanced in 2007, is your primary reference for achieving compliance with the FDA Juice HACCP regulation. The manual outlines how to build a HACCP program, and provides details on building and organizing a plant prerequisite program with model forms and examples. It also covers the practical application of the seven principles of HACCP, including model examples and forms, including specific product description, as well as flow diagrams for hazard analysis and HACCP plans. These models cover orange juice from concentrate, orange juice not from concentrate, apple juice, grape juice, pasteurized carrot juice and tropical blend juice.
This manual serves as an important aid for complying with FDA juice HACCP requirements. The extensive appendix contains the FDA Juice HACCP regulation, FDA-developed questions and answers, and FDA guidance letters and scientific validation studies on 5 log reductions mandated by the regulation

IDFA HACCP Reference Manual
Everything you ever wanted or needed to know about dairy and juice HACCP is included in this manual. It contains a compilation of HACCP information from the National Advisory Committee on Microbiological Criteria for Foods (NACMCF), Codex Alimentarius, the U.S. Food and Drug Administration (FDA) and the National Conference on Interstate Milk Shipments (NCIMS).
The reference manual includes a HACCP Toolkit and a HACCP decision tree, supplemented by a hazard analysis form and HACCP Plan form, is also included. It's a must-have desk reference for any plant that produces dairy or juice products and operates a HACCP program to meet SQF code, BRC code or ISO 22000 standards.

HACCP Software
IDFA's HACCP Software Program – HACCPPlan.net
IDFA, in partnership with business software provider LSN/Nicheware, offers a comprehensive software package to help members develop and maintain HACCP programs. Called HACCPPlan.net, the software includes sample HACCP plans and a database for a wide variety of processing facilities. HACCPPlan.net is a Microsoft Windows-based software package that guides your development, maintenance and updating of your processing plant's HACCP program.
A 15-day free trial copy of HACCPPlan.net is available. (NOTE: The trial copy does not include the sample dairy HACCP programs.)
HACCP Auditing Services
The IDFA sanitation and/or HACCP audit will test your system to determine if it is ready for customer, third-party and regulatory inspections and audits. IDFA's expert staff is available to conduct desk-side audits of documents as well as onsite audits of your processing facility. After the audit, you will receive a written report either certifying your adherence to IDFA standards or listing necessary steps for improvements that will provide a path toward achieving conformance to IDFA processing plant and HACCP standards.
IDFA also offers a HACCP program review analysis. Send your written dairy and juice HACCP programs, and IDFA's expert staff will analyze your program and provide a written report detailing suggestions for improvement.
