Research Attempts to Crack Flavor Code for Low-fat Cheese

The latest edition of "Dairy Research Insights," featuring reviews of the latest nutrition, product and sustainability research, is now available online.

Highlights include new research that will help manufacturers to continue to develop low-fat cheeses with flavors that will gain consumer acceptance. It also examines results that show how dairy foods, which are important sources of protein, calcium and vitamin D, can be part of effective weight-loss plans.
