Numerous private and governmental groups including Alliance for a Healthier Generation are setting agendas and seeking to change America's dietary habits. A new industry wide program has been developed to promote healthier beverage consumption amongst kids and teens, and also protect and promote increased consumption of low-fat and fat-free milk. Hear the latest on this initiative and how you can develop great tasting low-fat flavored milk.

9:45 am - 10:30 am The Power of the Sunshine Vitamin?
As more research is done on the power of Vitamin D and its multiple health benefits it is more important then ever for processor to properly fortify fluid milk with vitamin D and other essential nutrients. Learn about the latest technology milk plants are using to make sure milk is fortified properly. This session will provide you with the most current information on the importance of vitamins and fortification in fluid milk.

10:45 am - 11:30 am DHS's Food Biological Agent Detection Sensor (FBADS)/Botulism
DHS's Science and Technology Directorate is in the process of developing a biological agent sensor for use by fluid milk processors and others. DHS believes a commercial unit could be available by the end of 2008. Learn about the progress of the effort and the design parameters that will be needed make it happen.

Part 1. Farm and Plant: How to Convert to Organic

With all the focus on consumers demand for organic milk and natural products the obvious question arises. Can your milk supply and current plants produce this product? What does it take for your company to compete is this growing market? Learn latest information on what is required to convert a dairy farm to produce organic milk and what are the requirements for other ingredients and processing plants to be USDA certified as organic or made with organic ingredients? We will also cover FDA's guidance on what qualifies as "natural.".

With the possible adoption of a proposal to allow for micro-filtration and bactofugation as alternatives to heat pasteurization for Grade A products, this session will provide the benefits and operational details for each of these systems., Some benefits could include reduced operating costs, improved milk taste and increased operational flexibility, while being compliant with state and federal Grade A regulations, i.e. Pasteurized Milk Ordinance (PMO). This technology also provides new opportunities to standardized milk components in order to more efficiently process dairy products, as well as develop new formulations and new dairy products.

This is the third of several exciting events that have been held for Worldwide Food Expo, IDFA's tradeshow and conference, which will take place October 24-27, 2207 in Chicago, IL. This networking event is a chance for Expo exhibitors to link up with dairy processors. This is a great way for the Milk Technology attendees to get to know leading industry suppliers. DAY TWO — Wednesday, June 6, 2007
8:15 am - 9: 00 am Regulatory Changes Affecting Dairy Plants
The 2007 NCIMS Conference will be reviewing many new proposals in May 2007 to change the Grade A regulatory landscape. In addition, updates will be provided on EPA air and water quality regulations, worker safety requirements, and the impact of the internal reorganization of FDA's Center for Food Safety and Nutrition. Get a look into the crystal ball so your plant is prepared for the most recent regulatory changes.

With increasing sales and the extremely successful "Got Milk?" and "Milk Mustache" marketing campaigns, the milk industry is attempting to further tantalize the palates of health minded consumers. The result is that dairy manufacturers are pushing the formulation and product ingredient envelope. Increasingly, companies are incorporating ingredients not commonly associated with dairy into a drinkable dairy-based beverages.
