IDFA Labeling Workshop: Trends and Issues for Dairy Products

This one-day workshop will provide the latest information on dairy label trends and explore what consumers are thinking about food and health. Hear about hot issues involving claims for organic products, produced without the use of rbST, hormones and antibiotics, adding functional ingredients to dairy products and much more! IDFA regulatory experts and government officials from FDA and USDA will provide the data that you and your staff need to produce compliant and effective labels.

8:15–10:15 a.m. Organic Regulations — Farm to Package
More and more dairy foods are entering the fast growing organic market. Learn from USDA NOP officials about the requirements for producing, processing and labeling organic dairy products. The session also will cover the elements of a plant's verification effort, which documents of authenticity are required for organic farming, subsequent levels of handling, permitted ingredients and labeling issues.

10:30–11:00 am Organic, Natural, Hormone and Antibiotic Labeling
We will cover labeling requirements for dairy products from cows that are not treated with rbST and claims touting that the products are all natural or produced without hormones or antibiotics. Some of these claims are governed by federal regulations, while others are based on federal guidance or state regulation.

11:00 am–12:00 pm FDA Update
Learn directly from FDA staff about initiatives for food labeling and standards and potential future label changes. Recent topics include qualified health claims, gluten-free labeling, how to regulate functional foods, consumer education of nutrition labels and exploration into the use of symbols to communicate nutrition information. Also learn about FDA's priorities, goals and recent enforcement issues.

1:15–1:45 p.m. What Consumers Are Thinking
Hear the latest consumer research from IFIC's 2007 Food & Health Survey on the perceived health and wellness benefits that foods and beverages provide. The session will also explore how consumers understand labeling claims and use information on the package, as well at what factors influence purchasing decisions.

1:45–2:30 p.m. Communicating Health: Health Claims/Qualified Health Claims/Structure Function Claims
Labels can be powerful tools for communicating health-related messages to consumers, whether through health claims (either significant scientific agreement or qualified health claims) or structure-function claims. Learn what claims are available for use on dairy labels and what the difference is between them.

2:30–3:00 p.m. Break: Featuring Dairy Foods with Added Omega 3
3:00–4:30 p.m. Functional Ingredients in Dairy Products
With the surge in omega-3 fats, plant sterols and stanols, and botanicals being added to a variety of food products, including dairy foods, it's important to know how these ingredients must be declared on the label and what claims can be made about them. While some functional ingredients have related health claims, others must be explained using structure-function claims. Find out how to label your products that contain unique functional ingredients.
