Trans Fat
In this session, we will give background on trans fats and what changes you need to make to your label to comply with the regulation by January 1, 2006. We will also discuss IDFA's updated nutrient database, which includes values for calculating trans fat in dairy products, and how to include trans fats from non-dairy ingredients in your nutrition values. We'll also discuss the required implementation date and what it means for your label change schedule. This session will end with an exercise for milk, ice cream and cheese products to prepare you for making trans fat labeling changes on your own products.

Allergens
In accordance with the 2004 Food Allergen Labeling and Consumer Protection Act, all products must declare food allergens on the package in plain English by January 1, 2006. Our speakers will discuss the allergens that may be found in dairy and other ingredients commonly used in dairy products, threshold levels of allergens and how to declare allergens on product labels. This session will conclude with the implementation date for allergen labeling and an exercise on labeling allergens in dairy products.
